There was no frost in the vineyard in 2017, due to its situation high upon the limestone plateau. Composed of 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon, which was harvested from September 25 to October 3, the 2017 Pavie is very deep garnet-purple in color and rolls slowly and sensuously out of the glass with growing scents of Black Forest cake, black plum preserves, blueberry compote and fruitcake plus suggestions of melted chocolate, licorice, crushed rocks and Indian spices with a waft of violets. Full-bodied, the palate packs a powerful punch, laden with electric layers of energetic black and blue fruits. All this decadent fruit is supported by fantastic freshness and very, very ripe, velvety tannins, finishing with epic length. Location, location, location was everything in 2017. Pavie has one of the most enviable locations in all of Bordeaux and boy-oh-boy does it show in this spectacular wine<br/>

Profound, crushed blueberry and blackberry aromas here. Mint and chalk undertones. Full-bodied with a center palate of balanced and ripe fruit with polished and caressing tannins. Excellent finish that goes on for minutes. All in finesse and length. A wine to contemplate and enjoy. Better after 2024

Dark and admirably ripe, with layers of fig and blackberry compote liberally infused with tobacco, licorice snap and fruitcake flavors. Shows some heft through the finish, but there’s enough energy to keep this moving along. A long, subtle echo of chalk is alluring.—J.M

Pavies heißen die kleinen Weinbergpfirsiche, die vor dem 4. Jahrhundert auf diesem Grundstück in Saint-Émilion wuchsen. Heute finden sie sich nur noch im Namen des Château Pavie, das das größte Premier Grand Cru Classé der gesamten Appellation ist. Mit 37 Hektar durchgehender Rebstöcke und jeder Menge Sonnenschein lässt sich diese bemerkenswerte, nach Süden ausgerichtete Parzelle in drei spezifische Terroirs unterteilen. Das von Alberto Pinto neu gestaltete Gutsgebäude hat eine große Glasfassade, die einen grandiosen Blick auf den Weinberghang eröffnet, von dem manche behauten, er sei der schönste Fleck in Saint-Émilion. Erworben 1998 von Gérard Perse, dem Eigentümer der Châteaux Pavie-Decesse und Monbousquet, ist Pavie heute einer der größten “Neue-Welle”-Produzenten. Wie die anderen Weine von Perse haben sich die Pavie-Weine zu spät gelesenen und hochgradig extrahierten Roten entwickelt, die ihre Balance aus der Dichotomie von Opulenz und Delikatheit erhalten. Der Grand Vin Pavie, 2012 zum Premier Grand Cru Classé A aufgewertet, ist ein exemplarischer Perse-Wein, der mit modernen Verfahren vinifiziert wird und als Resultat reich, konzentriert und von höchster Qualität ist.
