Château Chauvin
Château Chauvin was created in 1891 by Victor Ondet, a prosperous dyer at the time who invested all of his money in the purchase of a 4-hectare estate. The property passed through multiple family members including Henri who was at the helm during its successful ranking as part of Saint-Émilion’s Grand Crus. Today, it is owned by his daughters, Béatrice and Marie-France. Over the years, they have increased their vineyard holdings and today, the château comprises almost 15 hectares, planted to Merlot, Cabernet Franc, Cabernet Sauvignon and some ancient Malbec. Its wines are produced from highly sorted grapes that are cold soaked, then fermented with their indigenous yeasts before being aged in 60% new oak barrels.
