The superb 2007 Brut Blanc de Blancs Le Mesnil wafts from the glass with a beautiful bouquet of crushed chalk, lemon oil, crisp green apple, white flowers and brioche. On the palate, it's medium to full-bodied, taut and incisive, with bright acids, a tight-knit core and a brisk mousse, concluding with a long, chalky and bone-dry finish. After the comparatively broad and fleshy 2002, 2004 and 2006 vintages, the 2007 Salon seems to mark a return to a racier, more precise style—though admittedly that's in keeping with the style of the vintage—that makes me anticipate the release of the 2008 all the more eagerly. <br/>

L’histoire de Salon est unique en Champagne. Déçu par la qualité des champagnes existant à l’époque, Eugène-Aimé Salon s’est engagé en 1911 dans la production de son propre champagne à partir du terroir exceptionnel du Mesnil. Il a déployé des efforts considérables pour élaborer le vin de ses rêves : un Blanc de Blancs sans précédent. Un seul mot suffit pour qualifier ce champagne : unique ! Il est élaboré à partir d’un seul terroir – la Côte des Blancs – d’un seul cru – Le Mesnil-sur-Oger –d’un seul cépage – le chardonnay – et d’un seul millésime. Le chardonnay provenant du Mesnil-sur-Oger apporte beaucoup de raffinement, de fraîcheur, de complexité et de capacité de vieillissement au vin, même après de longues années passées en cave.
