In 1999, Celestino Gaspari produced his first wine at home, in his garage. He put his experience gained working at Quintarelli to good use and founded the Zymē winery in 2003. His experience in winemaking was also consolidated through 17 years of work as a consultant winemaker for various companies. In 2006 From Black to White was born, the only white made with 60% of Rondinella Bianca, and then Valpolicella Classico Superiore.
The same year, Zymē moved the aging area in a 15th century sandstone quarry, that became the first official headquarter of the winery. In 2012, the cellar was enlarged with a new structure, a singular architectural project that takes the shape of a pentagonal building surrounded by the veins of the grape leaf in Corten steel. The pentagon and the leaf are used as symbol of the wine world and the 5 basic elements necessary for wine production (water, soil, sun, grape and man). Zymē, from ancient Greek, means yeast. Yeast is an essential element in oenology, but it also recalls the fermentation process, understood as an incessant desire for transformation.
