According to Raveneau, the airy exposure of its site inherently lends more elegance to his 2006 Chablis Valmur and less weight or opulence than the Blanchots. (The Valmur, too, originates with a high average age of vine.) Diverse flowers and herbal high tones in the nose usher in a remarkably polished, refined palate, one no less tactile in its mineral dimensions than the Blanchots, but more transparent, and with a lift that matches its wafting floral perfume and a purity of yellow plum and grapefruit that are seductively succulent. This unforgettably persistent, truly grand cru should dazzle for 12-15 years.

Domaine Raveneau François
Highly regarded as the finest producer in Chablis, it is not a surprise that their wines are quite rare to come by. Founded in 1948 by François Raveneau, the Domaine is now run by his sons, Jean-Marie and Bernard. The property is home to around 9 hectares of the region’s greatest Grand Cru and Premier Cru vineyards. Producing the region’s leading white wines, the vineyards are planted to exclusively to Chardonnay. The Domaine is also one of the remaining few in Chablis to hand-harvest, which they do earlier than later in order to retain the grape’s acidity. The resulting wines are always of superior quality, displaying a racy, pure minerality with notes of honeyed fruit. These wines have a great ageing potential, with most benefiting from five to ten years of cellaring. Extremely limited production, with yearly production around 4000 cases.
