Domaine Bachelet Denis

Denis Bachelet has a quiet cult standing amongst Burgundy circles - quiet in the sense that it is nearly impossible to find any of his wines and cult, well for much of the same reason and for the fact that they are exquisite bottlings. Located in Gevrey-Chambertin, this pearl of a domaine encompasses less than 4 hectares and produces only a handful of appellations, including one Grand Cru, Charmes-Chambertin. His style is all about finesse and his winemaking is simple, allowing Mother Nature do her work, but under his watchful eye. Once the grapes are de-stemmed, he crushes the grapes and cools the juice for up to a week before fermentation starts with natural yeasts. He uses a percentage of new barrels, but only allows a small amount that marries well with the wine. The resulting wines are elegant, streamlined and pure.
