This is really incredible with orange peel, dried pineapple and flan. Exotic. Full body, round and savory. Crazy character at the finish of cooked pineapple and tart tartine. Gorgeous; can't believe it.

Medium lemon-straw colour. Intensely fragrant nose with aromas of jasmine, cinnamon buttered toast, stewed apples and preserved ginger. Concentrated honey-nut, warm apple tart and spice flavours fill the mouth giving ample flesh to the firm, fine structure. The bubbles are still remarkably frisky and, in harmony with the crisp backbone of acid, make for a relatively youthful, elegant and exquisitely balanced wine. Very long finish. Drink now to 2015. Tasted December 2008.

Dom Pérignon is quite possibly the most iconic Champagne in the world. Tracing its roots back to the 17th century, when the monk, Dom Pierre Pérignon declared his ambition to create “the best wine in the world”. Today, he is known as the father of Champagne. He spent almost 50 years making the world’s first Champagne in the Abbey of Saint Pierre d’Hautvillers. Made from the very best grapes, each vintage of Dom Pérignon is unique, showing notable transparencies between the varying climatic conditions. The alliance between ripeness, vibrancy, lightness and intensity in each bottle gives the wine the ability to age with suppleness and elegance.
