Bibi Graetz is an international reference point thanks to his Testamatta and Colore wines, made from pure Sangiovese. The grapes are cultivated on the Florentine hills of Fiesole and in the best areas of Chianti Classico, such as Montefili and Lamole. The white wines are produced on the Giglio Island from fantastic hundred-year-old Ansonica vines overlooking the sea.

Completely self-taught, he founded his winery in 2000 on the Florentine hills in Vincigliata. He began experimenting with old Sangiovese, Canaiolo, and Colorino vineyards, treating the various parcels as if they were colors on his palette, and vinifying them separately, an approach he has maintained to this day.

The 72 hectares of vineyards have been selected according to three characteristics: native varieties, high altitudes, and old vines up to 125 years old. Today, Bibi Graetz owns the largest collection of old vines in Tuscany.

In 2019, the small town of Fiesole on the Florentine hills, the historic Hotel Aurora, proved to be the ideal place to establish the new home of Testamatta and Colore. The hotel has been transformed into a unique winery, where the history of the building blends with the smell of freshly fermented wine and the artworks of the Graetz family.
