Sémillon

A grape variety that is far more known behind the scenes than on centre stage, Sémillon produces some of the world’s greatest wines, most notably Sauternes from estates such as Château d’Yquem and Château Climens. Notably susceptible to botrytis (aka « noble rot »), it sheds its shy personality for one of exoticism, revealing notes of honeyed truffle, dried mango and lemongrass. As a dry wine in many of the white Bordeaux blends, it exhibits an ample palate of discreet flavours, including beeswax and pear. It is also known outside of France, most notably in bottlings from Hunter Valley, Australia. These wines are completely different with crisp acidity, tightly wound flavours and lowish-moderate alcohol. Cellaring is necessary in order to coax them out of their shell. ...
