Counoise is one of the lesser seen varieties that produce southern red blends, most notably Châteauneuf-du-Pape, France’s most celebrated southern wine. While it is not particularly dark in colour, it is used to add lift, flavour (it is known for its peppery notes) and acidity to otherwise richer styled wines. Though it is well viewed, its plantings have decreased over the years, possibly because it has been confused with Autun, a lesser quality variety.
