Just as its name suggests, Colorino is a deeply coloured Tuscan variety, which has been used in Chianti blends for many years. In the past, it was traditionally dried and its rich juice was added to give additional colour as well as added fruitiness and enabled a wine to finish fermenting quicker (known as the “governo” vinification technique) in order to be marketed quicker. Since the 1980s, this technique has mostly fallen by the wayside and Colorino is now used to give colour and structure without changing Sangiovese’s characters. ...
