The oldest of the sweet wines I tried this time was the 1958 Don PX Convento Selección, a very complex and nuanced wine with notes of charred wood, tar, coal, bitter dark chocolate, licorice, roasted coffee beans and aromatic herbs. The palate is compact with no fissures and a bitterness that compensates the sweetness (it has 350 grams of sugar, so it's not a surprise that it doesn't feel as sweet as others). Antonio Sanchez Prieto founded Bodegas Toro Albalá in 1844, in the village of Aguilar de la Frontera. By 1922, José Ma Toro Albalá restored the former electric power station of Aguilar where he moved the winery, and still is today. The Montilla-Moriles region is famous for Sherry, to create this fantastic concoction, the grapes are sun-dried into raisins before being pressed and fermented. Due to the incredible concentration of the juice, the wines are notably sweet but also wonderfully fresh. Don P.X. is their renowned Sherry, full of rich and deep flavors of raisins, figs and dates - the perfect pairing could be anything from blue cheese, to vanilla ice-cream, undoubtedly a must try. Andalucía is home to the famed dessert wines of Montilla-Moriles. As the northernmost vinous DO (Denominación de Origen) in Andalucía, the region is centered around the towns of Montilla and Moriles, and lies about 45km south of Córdoba and 100km north of the Mediterranean coast of Málaga. Encompassing an area of about 40km wide, the appellation benefits from a hot and dry climate, very similar to Jerez, Spain’s sherry country. Possibly the hottest area on the Iberian Peninsula, these climatic factors are ideal for achieving prime ripeness of fruit. The landscape for the most part is flat and scattered with wheat fields, olive groves and vineyards. In general, Montilla-Moriles is known for their rich dessert wines made from the Pedro Ximénez varietal and are usually not fortified. These wines are classified by their style, from Joven Afrutado (young and fruity), to Fino (dry and nutty), Amontillado (sweet and complex), Palo Cortado (rich yet crisp), and Oloroso (richest and darkest). Apart from these wines, the region produces another dessert wine, from extremely ripe Moscatel grapes, and brandies from Airen. ...
