Zýmē

Zýmē is as indispensable to Valpolicella, as yeast is to vinification. The term zýmē, in ancient Greek means yeast, but the word represents much more than the name of this winery – it is a symbol of Celestino Gaspari’s devotion to nature. Although recently established by Gaspari himself in 2003, he grew up in the wine industry, and has worked many years already as a consulting oenologist. This extremely talented individual, with his avant-garde philosophy has become one of the most remarkable and distinctive producers in the region. Located in the heart of the Valpolicella Classica area, the age-old sandstone quarry is home to the contemporary Zýmē estate. Corvina is the most distinguished red grape in the Veneto region of Italy and the main variety in Amarones, Valpolicellas and Bardolinos. It produces wines of varying styles depending on its method of production. As a Valpolicella, its wines can often be light-medium ruby in colour with fragrant notes of cherries and strawberries. Veneto

One of the more important wine regions in Italy, the northern Veneto creates some of Italy’s most popular wines such as Amarone, Soave, Prosecco and most of the country’s Pinot Grigio. As a result of the popularity of Pinot Grigio and Prosecco, it has become the most important Italian wine region in terms of volume, overtaking the southern regions of Puglia and Sicily. It begins at the eastern border of Lake Garda and carries forward until the outskirts of Venice, after which it is named. Like most other regions in Italy, its main success relies on indigenous grapes such as Corvina for Valpolicella and Amarone, Glera for Prosecco and Garganega for Soave.
